The Signature Mai Tai: Salt-Rimmed Edition

This Mai Tai recipe takes the classic blend of aged rums, bright lime, and nutty orgeat and elevates it into a modern, high-end experience. We specifically feature The Garnish Club dehydrated fruit for an intense, long-lasting citrus aroma, and a Garnish Club flavoured salt rim to introduce a complex new layer of flavour—whether savoury, sweet, or spicy—with every sip. It’s a truly complete sensory journey.

Ingredients (Metric)

  • Aged (Gold) Rum (e.g., Jamaican): 30ml. Must be a high-quality aged rum for flavour.)
  • Rhum Agricole or Dark/Overproof Rum: 30ml. Adds complexity and depth.)
  • Fresh Lime Juice: 22ml. Essential for balance; freshly squeezed is mandatory.)
  • Dry Curaçao (or Cointreau): 15ml. The required orange component.)
  • Orgeat Syrup (Almond Syrup): 15ml. Gives the Mai Tai its signature nutty backbone.)
  • Simple Syrup (1:1 ratio): 8ml. Optional, use if you prefer a slightly sweeter profile.)

Instructions

  1. Prepare the Glass and Rim: Select a Double Old-Fashioned glass or a Tiki mug. Moisten half of the glass rim with a lime wedge, then roll the edge in The Garnish Club Flavored Cocktail Salt.
  2. Add Ice: Fill the prepared glass completely with crushed ice. Set aside.
  3. Combine Ingredients: Add both rums, lime juice, Dry Curaçao, Orgeat, and Simple Syrup (if using) into a cocktail shaker.
  4. Shake Vigorously: Add standard ice cubes to the shaker and shake hard for 10 to 15 seconds until the shaker is thoroughly chilled.
  5. Serve: Strain the cocktail mixture over the mound of crushed ice in your prepared, salt-rimmed glass.
  6. Garnish: Finish by placing one or two pieces of The Garnish Club Dehydrated Fruit (such as a lime or orange wheel) on the ice. A fresh mint sprig is a great aromatic addition.
